Meals for Under £10: Pastrami-style Corned Beef Sliders

WE’VE all had those times when we’ve arrived home from work and realised we’ve got nothing prepared for a meal. That’s where canned food can be a godsend.

These burgers are made from corned beef plus a few other bits and pieces and they’re delicious. They’re quick to make, and kids will love them.

You’ll need:

2 onions, thinly sliced

25g butter

1 tbsp soft brown sugar

1 tsp ground coriander

1 tsp crushed fennel seeds

½ tsp allspice

340g can of corned beef

To serve

4 slices of Swiss cheese

4 eggs

4 brioche buns

Method:

Pre-heat the oven to 180C/160C fan/gas 4.

Heat a good splash of oil in a frying pan over a low to medium heat and add the sliced onions. Let them cook slowly then, when they soften, add the butter and the brown sugar to caramelise until they turn sticky.

Remove onions and set aside. Splash another drizzle of oil to the pan, add the spices and some pepper.

Remove corned beef from tin and, using two forks, pull the meat apart so you have some good shreds of beef. Add these to the pan, stir in well and heat through until piping hot.

Slice open the brioche buns, pile up the corned beef, top with a slice of cheese and a spoonful of the rested onions on top of that. Pop then in the oven for 5 minutes or just long enough to melt the cheese.

In a clean pan fry your eggs. Take the sliders out of the oven and pop the egg on top.

Top with mustard or your favourite sauce.
