Quick bites: How to make this delicious strawberry mousse for two

You’ll need

• 1 egg white
• 50ml double cream
• 100g strawberries
• 30g sugar

Method

Prepare the strawberry puree by placing the strawberries and 15g sugar in a pan. Very gently heat until the strawberries release some of their juices. Blend into a smooth puree, pass through a sieve, and chill for a few minutes.

Take two bowls and an electric whisk. Whisk the double cream to soft peaks. Clean the whisk, then whisk egg white to stiff peaks. Add remaining sugar to egg white. Combine both mixtures and fold in ¾ of the strawberry sauce.

In two glass bowls, drizzle a little of the remaining sauce in the bottom and gently place the mousse on top. Chill in the fridge for at least an hour.

To serve, drizzle strawberry sauce on the top and decorate with strawberries.
