There’s no better midweek meal than a piping hot bowl of pasta, and this creamy dish is not only super-quick and easy to prepare, but a perfect treat for the whole family.

100g Scotty Brand smoked salmon
1 tsp butter
1 garlic glove crushed
150ml double cream
2 eggs beaten
3tbsp freshly grated Parmesan
Cook the spaghetti in a large pot of boiling water.
At the same time, melt the butter in a small pan, before adding the garlic to gently sizzle for around one minute. Remove from the heat.
Lightly beat the cream, eggs, garlic and half the Parmesan in a bowl.
Stir in the smoked salmon.
Drain the pasta and return to the pan.
Add the salmon mixture, and toss well so the heat from the pasta lightly thickens the sauce.
Serve scattered with the remaining Parmesan.
