Zingy chicken salad

Ingredients

1 handful each of mint and coriander
Juice of 2 limes
2 tsp sesame oil
1 tsp sugar
2 tsp soy sauce
2 cooked Great British Chicken breasts, sliced
1 x 300 g bag bitter salad leaves, such as endive or rocket
½ cucumber, sliced
2 spring onions, very finely sliced
1 avocado, sliced

Tear herbs into a bowl then add lime juice, sesame oil, sugar and soy and mix well. Add chicken and toss to coat.

Assemble salad leaves, cucumber, spring onions and avocado on serving plates. Top with chicken and drizzle over remaining dressing.
