Christmas Cookies


Children will love helping to make and decorate these biscuits. Thread with ribbon and hang them on the Christmas tree as decorations, or just eat them up!

Ingredients

425 g (15 oz) plain flour
1 tsp baking powder
1 tsp bicarbonate of soda
1 tsp mixed spice
½ tsp ground ginger
125 g (4 oz) soft butter
175 g (7 oz) soft dark sugar
4 tbsp golden syrup
1 egg, beaten
½ tsp ground ginger

Preheat oven to 180C, 350F or gas mark 4.

Place flour, baking powder, bicarbonate of soda, spice and ginger in a bowl. Melt butter, sugar and syrup together and pour into dry ingredients. Add egg and mix to combine. Tip dough on to a floured surface and bring together into a ball. Roll out to
½ cm (¼ in) thickness. Cut out circles and star shapes and place on a non-stick baking tray. Remember to make holes in the biscuits if you are making them to hang up.

Cook in the oven for 10 minutes until slightly risen and golden. Cool on a wire rack before decorating with icing as liked.
