Wine and berry jelly
Ingredients 3 leaves gelatine Place gelatine leaves in a bowl of water, one at a time and allow to soak. Place sugar in a pan with 50 ml (2 fl oz) water and bring to boil. Simmer for 2 minutes. Remove from heat. Squeeze water out of gelatine leaves then add to pan and whisk. Add wine, cordial and lemon juice and mix well. Place several berries in the bottom of two glasses and pour over enough jelly mix to just cover. Put glasses in fridge. Leave remaining jelly mix in pan. Once jelly in glasses has just set, gently pour remaining jelly over the back of a spoon into glasses to fill. Chill until set. |
