White bean and tuna niçoise



Ingredients


400 g can whole green beans, drained
1 can cannellini beans, rinsed and drained
198 g can tuna, drained
½ small red onion, finely sliced
½ cucumber, cut into chunks
3 ripe vine tomatoes, quartered
2 hard boiled eggs, quartered
75 g (3 oz) olives
6 anchovy fillets (optional)
½ lemon, juiced
2 tbsp olive oil


Divide the green and cannellini beans between two plates. Top with the tuna, onion, cucumber, tomatoes, egg, olives and anchovies if using.

Whisk the lemon juice and olive oil together, add salt and pepper to taste and pour over each salad.
