Chargrilled vegetable and hummus wraps

Ingredients

1 red and 1 yellow pepper
1 large courgette
8 tbsp hummus
4 tortilla wraps

Deseed peppers and slice into strips. Top and tail courgette and slice into rounds. Toss vegetables in a little olive oil and season with salt. Chargrill on a ridged griddle pan or under a hot grill in a tray for 4 to 5 minutes, or until soft.

Warm tortillas for a few seconds in a microwave or frying pan. Spread each with a thin layer of hummus and arrange some vegetables along one side. Roll up.
