Thai Pork Bites



Ingredients

450 g (1 lb) lean minced pork
2 cloves garlic, crushed
5 cm (2 in) root ginger, peeled and grated
1 tbsp fresh coriander, chopped
4 spring onions, finely sliced
Juice and zest of 1 lime

For dipping sauce:
1 tbsp soy sauce
1 tbsp sherry 
1 tsp honey
1 tbsp sweet chilli sauce

To serve:
Cucumber and spring onion salad
Toasted pitta bread


Preheat oven to 200C, 400F or gas mark 6.

In a bowl mix the pork with the garlic, ginger, coriander, spring onion and the lime juice and zest. Mix well and shape into 12-14 patties. Place patties on a baking tray and cook in the oven for 20 minutes. 

To make the dipping sauce mix together the soy sauce, sherry, honey and sweet chilli sauce. 

Serve the patties with the dipping sauce, a cucumber and spring onion salad and toasted pitta bread. 

Note: If making this recipe for young kids serve with hoisin or plum sauce as the dipper.
