Sweet pork and chilli stir fry

Ingredients

450 g (1 lb) lean pork stir fry strips
1 red pepper, deseeded and sliced 
1 bunch spring onions, sliced
1 clove garlic, chopped finely
2 ½ cm (1 in) root ginger, grated
1 x 85 g watercress
2 tbsp sweet chilli dipping sauce
1 tbsp fish (or light soy) sauce

Heat a little oil in a wok until hot. Add meat and stir fry for 6 to 8 minutes, or until browned and cooked through. Add pepper, onion, garlic and ginger and cook for 2 to 3 minutes. Add watercress, chilli and fish or soy sauce and continue to stir fry for 1 to 2 minutes, or until leaves have wilted.
