| Stuffed beef ciabatta rolls |

Ingredients:
(Serves
4)
4 mini ciabatta rolls
4 tbsp mayonnaise
2 tbsp horseradish sauce
4 garlic cloves, crushed
1 cucumber, very thinly sliced
4 tbsp white wine vinegar
2 tsp brown sugar
4 tbsp dill, chopped
500 g (1 lb) lean beef rump steak
4 Cos lettuce leaves, shredded
8 sundried tomatoes, sliced
Cut a slit into each roll to form a pocket.
Mix mayonnaise, horseradish and two garlic cloves which will make an aioli. Then make the pickled cucumber by combining cucumber with vinegar, sugar and dill.
Fry steak with remaining garlic for four minutes each side then slice thinly and use to stuff rolls along with lettuce, tomato, aioli and cucumber.
