Special fried rice

Ingredients

175 g (6 oz) jasmine rice
100 g (4 oz) frozen peas
4 large Lion Quality eggs, beaten
225 g (8 oz) pork loin, sliced finely
3 spring onions, sliced
75 g (3 oz) shitake mushrooms, sliced
3 tbsp light soy sauce
1 tbsp sesame oil

Cook rice until tender, adding peas for final 2 minutes of cooking time. Drain. Heat a wok over a high heat and add 1 tbsp oil. Add eggs and cook, stirring, until scrambled. Transfer to a plate. Wipe out wok. Return to heat and add 1 tbsp oil. Add pork and stir fry on a high heat for 5 minutes. Add onion and mushrooms and stir fry for 2 minutes. Turn down heat and add egg, rice, peas, soy sauce and sesame oil. Heat gently, stirring to mix.
