4 tbsp Bottlegreen Spiced
Berry Cordial
1 ¼ sachets (4 tsp) powdered gelatine
450 ml (16 fl oz) sparkling water
50 g (2 oz) seedless grapes or berries (defrosted, if frozen)
Extra grapes/berries, mango slices and mint to decorate
Pour cordial into a jug.
Pour 100 ml (4 fl oz) boiling water into a separate measuring jug and allow to cool for a few minutes before sprinkling in gelatine, stirring. Allow to dissolve for 5 minutes, stirring occasionally, until clear. Add to cordial, stirring well. Pour in sparkling water.
Divide grapes or berries between four glasses then pour in liquid. Chill for 2 to 3 hours, until set. Dip extra fruit into cold water then sprinkle with a little sugar. Decorate jellies with sugared fruit, slices of mango and mint.
