Salmon with coriander crust



Ingredients

5 cloves garlic, peeled
2 tsp salt
5 cm (2 in) root ginger, peeled and grated
Zest and juice of 3 limes
1 large pinch each of cinnamon, cumin and coriander
1 bunch of fresh coriander
1½ tbsp olive oil
4 salmon fillets


Place all ingredients except salmon in a food processor and grind in some black pepper. Blitz to a paste.

Seal salmon on one side in frying pan for a minute or two. Spread paste evenly over each fillet. Place salmon in a moderate oven for seven or eight minutes or until cooked through.
