Herby broccoli and cracked wheat salad

Ingredients

100 g (4 oz) Tenderstem broccoli
100 g (4 oz) cracked wheat
50 g (2 oz) each of pistachio nuts and apricots, chopped
1 red onion, chopped
1 bunch each of mint and parsley, 
Juice and zest of 1 lemon

Plunge broccoli into boiling salted water and cook for 1 minute. Drain and cool under cold running water.

Place wheat in a bowl and cover with boiling water. Stretch cling-film over top of bowl and leave for 30 minutes. Drain away any excess water and mix in 4 tbsp olive oil, broccoli and remaining ingredients.
