Roast shallots with Parma ham and Parmesan

Ingredients

400 g (14 oz) shallots, peeled 
2 tsp brown sugar
4 tbsp balsamic vinegar
4 basil leaves
125 g (4 oz) sliced Parma ham
60 g (2 ½ oz) Parmesan shavings

Heat 2 tbsp olive oil in a pan. Add shallots and stir to coat in oil. Cover with lid and sweat for 5 minutes. Add sugar and season with salt and pepper. Continue cooking very gently, covered, for 30 minutes. Add vinegar and bubble for 1 minute. Allow to cool. Tear basil leaves and add to shallots. Arrange shallots, ham and Parmesan on serving plates.
