Ingredients
675 g (1 lb 8 oz) potatoes (such as Desiree), cubed
1 onion, chopped
1 red pepper, diced
340 g (12 oz) corned beef, diced
195 g tin sweetcorn, drained
2 tsp Worcestershire sauce
2 tbsp freshly chopped parsley
Cook potatoes and drain.
Heat two tbsp of oil in a large frying pan and sauté potatoes for 10 minutes until golden. Add onion and red pepper and fry for five minutes. Stir in the corned beef, sweetcorn and Worcestershire sauce and season with salt and pepper. Heat for 10 minutes or until piping hot. Sprinkle over parsley and serve.
