Porridge supreme

Ingredients

½ cup oatmeal
½ cup milk
1 knob butter
1 tsp sugar
150 ml (5 fl oz) double cream
1 tbsp icing sugar
1 eating apple, cored and diced 
1 tbsp vanilla vodka (or 1 tsp vanilla essence)
Lemon juice
225 g (8 oz) raspberries 
3 tbsp sweetener (or sugar to taste)

Put oatmeal in a pan with one and a half cups of water and the milk and bring to boil. Add butter and simmer, stirring, for around 10 minutes. Switch off heat, mix in sugar and leave to cool. 

Meanwhile, whip cream gently with icing sugar until thick. Microwave apple with vodka and a few drops of lemon juice for approx. two minutes to soften. Mix raspberries with sweetener or sugar to taste. 

Stir cream into cooled porridge and leave to stand until almost ready to eat. Now mix in apple and raspberries. Decorate with more cream and brown sugar, if liked.
