A delicious pork casserole using seasonal vegetables and cooked in cider.
2 tsp olive oil
225 g (8 oz) lean pork fillet, diced
1 medium onion, sliced
10 g (1⁄2 level tbsp) plain flour
200 ml (7 fl oz) dry cider
1 small eating apple, peeled, cored and sliced
One swede, finely sliced
Preheat the oven to 190 C, fan oven 170 C, gas mark 5.
Heat the oil in a large frying pan and fry the pork and onion for five minutes until browned. Add the flour and cook for 1 minute. Gradually stir in the cider and bring to the boil. Add the apple.
Layer 1⁄3 swede in the base of a small casserole dish, top with half the pork, add another 1⁄3
swede. Spoon the remaining pork over and finish with a layer of the remaining
swede. Cover and bake for 11⁄2 hours until tender.
