Picnic loaf

Ingredients

1 small bloomer loaf
6 tbsp onion relish
1 handful rocket
150 g (5 oz) roasted peppers 
75 g (3 oz) roasted aubergines 
25 g (1 oz) sun-dried tomatoes, chopped
1 red onion, sliced finely
225 g (8 oz) cold roast beef, sliced thinly

Cut loaf in half lengthways and pull bread out from centre to hollow out. Spread relish on bottom half of loaf then layer in remaining ingredients. Replace loaf lid and wrap tightly in cling-film. Chill for several hours before slicing.
