Panforte
Ingredients
350 g (13 oz) dark chocolate
3 egg whites (use Lion Brand eggs)
370 g (13 oz) icing sugar
200 g (7 oz) grated or ground almonds
100 g (4 oz) walnuts, roughly chopped
30 g (1 oz) dried or candied orange peel
2 tbsp water
Melt 250 g (9 oz) of the chocolate.
In a large bowl, beat the egg whites with a fork for two minutes. Add 300 g (11 oz) of the icing sugar, nuts and peel and
mix well. Mix in the melted chocolate very gently.
Line a shallow round dish or tin approx 16 cm (6 in) in diameter by 3 cm (1 in) deep with cling film. Pour in chocolate mixture and chill for two hours or until set.
Melt remaining chocolate.
Heat remaining icing sugar and water together in a saucepan until sugar has melted and liquid is syrupy. Add melted chocolate and mix.
Place chilled cake upside down on a plate and peel off cling film. Spread chocolate syrup mixture over cake and chill until set. Slice into bite-size pieces and serve with coffee.
