Banana stack



Ingredients

100 g (4 oz) plain flour
1 medium egg, beaten
200 ml (7 fl oz) milk
2-3 bananas, sliced
2 tbsp lemon juice


Sift flour and a pinch of salt into a bowl then add egg and half of milk and mix until smooth. Add remaining milk and whisk again. Stand for 30 minutes. Heat a lightly-oiled frying pan and drop in tablespoons of mix to form small pancakes. Immediately place 4-5 slices of banana onto each pancake. Cook each side for a couple of minutes. Repeat with remaining mix.

Serve with maple syrup, ice cream or whipped cream.
