Orkney pizza

Ingredients

4 plain mini nan breads
2 tbsp tomato puree
50 g (2 oz) chestnut mushrooms, sliced very finely
¼ green pepper, diced finely
25 g (1 oz) chorizo, sliced finely
75 g (3 oz) Orkney cheddar, diced finely
2 tsp green pesto

Preheat oven to 200C, 400F or gas mark 6.
Spread nans with tomato puree and top with mushrooms, pepper, chorizo and cheese. Bake for 10 minutes then drizzle over pesto and serve.
