Jersey Royal savoury slices



Ingredients

900 g (2 lb) Jersey Royal potatoes
50 g (2 oz) unsalted butter, melted
1 small bunch spring onions, finely chopped
3 tbsp grated parmesan cheese
Celery salt


Preheat oven to 200C, 400F or gas mark 6.

Simmer potatoes gently for 10 minutes then drain and plunge into cold water to cool. Drain and cut potatoes into slices. Lightly butter a shallow ovenproof dish and cover with a layer of potatoes, brushing with some melted butter. Sprinkle over some of the onion, cheese and a little celery salt. Repeat layers three more times or until all ingredients are used. Bake for 25 minutes.
