Coconut-ice snowmen



Ingredients

100 ml (4 fl oz) milk
150 g (5 oz) desiccated coconut, plus extra for rolling
175 g (6 oz) Fruisana Fruit Sugar
½ tsp vanilla extract
Black or brown writing icing 
1 pack of multi-coloured roll-out icing

Place milk and coconut in a pan and heat gently for 5 minutes. Add Fruisana sugar and vanilla and cook for a further 5-10 minutes until mix is sticky and translucent. Spoon onto a baking tray lined with baking parchment. Cool. Roll 8 balls the size of walnuts for heads and 8 larger balls for bodies. Roll balls in desiccated coconut. Press heads onto bodies. Use writing icing to draw on eyes and buttons. Use coloured icing to make hats, noses and scarves.
