| Classic Christmas forest fruit trifle |

1 x 135 g strawberry flavoured jelly 1 x 175 g jam swiss roll 4 tbsp sherry (optional) 350 g (12 oz) frozen fruits of the forest, defrosted 1 x 525 g carton Alpro soya dairy free alternative to custard 1 x 250 g carton Alpro soya dairy free alternative to cream 200 ml (7 fl oz) plain Alpro soya dairy free alternative to yogurt 100 g (4 oz) fresh fruit, to decorate 15 g (½ oz) toasted flaked almonds Make up jelly according to pack instructions, using 450 ml (16 fl oz) water. Allow to cool but not set. Cut swiss roll into 8 slices and arrange in a large serving bowl. Sprinkle over sherry, if using. Top with fruits of forest and pour over cooled jelly. Chill until set. Pour custard alternative over jelly and smooth. Whisk soya cream until slightly thickened. Fold in soya yogurt. Spoon over custard and decorate with fruit and almonds. |
