Chow mein with prawns  

Ingredients

225 g (8 oz) medium egg noodles
1 bunch spring onions, cut into strips
1 carrot, grated
100 g (4 oz) mange tout, shredded
225 g (8 oz) cooked peeled prawns
1 garlic clove, crushed
2.5 cm (1 in) root ginger, grated
1 red chilli, de-seeded and chopped
4 large Lion Quality eggs, beaten
2 tbsp dark soy sauce

Cook noodles according to pack instructions. Meanwhile, heat 1 tbsp oil in a wok, add spring onions, carrot, mange tout, prawns, garlic, ginger and chilli and stir fry for 2 to 3 minutes. Transfer to a bowl and keep warm. Add 1 tbsp oil to wok and pour in eggs. Cook, stirring, until scrambled. Add soy sauce, noodles and vegetable mix and stir fry for 1 minute.
