Chilled tomato soup

Ingredients

1 kg (2 lb 4 oz) ripe tomatoes, chopped roughly
1 green pepper, deseeded and chopped roughly
1 onion, chopped
2 cloves garlic, crushed
3 tbsp Sacla Wild Rocket Pesto

Place tomatoes, pepper, onion and garlic in a bowl. Add 2 tbsp pesto and mix thoroughly. Cover and leave to marinate overnight in the fridge. Place mix in a food processor and process until smooth. Season to taste with salt and pepper. Divide between four bowls and drizzle over remaining pesto.
