Chicken with watercress, 
basil and lime pesto

Ingredients: (Serves 2)

4 Great British Chicken drumsticks 
and 4 wings
50 g (2 oz) watercress
25 g (1 oz) basil
˝ green chilli, seeds removed
75 g (3 oz) toasted pine nuts
4 tbsp grated parmesan
1 garlic clove, crushed
Juice of 1 lime


Brush chicken with a little oil and barbecue for around 15-20 minutes, or until well cooked.

Meanwhile, place remaining ingredients plus 2 tbsp olive oil and some salt and pepper in a food processor and blend until smooth. Once chicken is cooked, spoon watercress pesto on top immediately.
