Cheese and apple salad

Ingredients

4 thick slices wholemeal bread, cubed
2 red apples, quartered and cored
Juice of 1 lemon
100 g (4 oz) cheddar, grated
2 carrots, grated
2 x 200 g bags crispy leaf salad

Toss bread cubes in 2 tbsp oil then spread on a baking tray and toast under a medium hot grill, turning, until golden and crisp. Meanwhile, slice apple thinly then toss with lemon juice and 2 tbsp oil. Add cheese, carrot, croutons and salad leaves and toss together.
