Ingredients:
100 g (4 oz) butter
100 g (4 oz) caster sugar
1 egg, separated
225 g (8 oz) plain flour
1 tsp Schwartz Mixed Spice
55 g (2 oz) currants
25 g (1 oz) candied peel
450 g (1 lb) all-in-one royal icing sugar
Selection of food colourings
Pre-heat oven to 170C, 325F or gas mark 3. Grease a baking sheet.
Cream butter and sugar until fluffy, then beat in egg yolk. Sieve flour and fold into butter mix with spice, currants and peel. Add just enough milk (around three tbsp) to make a stiff dough. Roll out dough and use bunny or egg cutters to cut out biscuits. Place on baking sheet and bake for 15 minutes. Remove biscuits from oven, brush with egg white, sprinkle with a little caster sugar and bake for a further five to 10 minutes.
Make up icing according to pack instructions and using colourings. Decorate biscuits as liked once cooled.
