Beef and broccoli balti

Ingredients

2 tbsp vegetable oil or ghee
1 large onion, chopped
2 garlic cloves, crushed
450 g (1 lb) frying steak, cut into strips
1 tbsp each of ground coriander, garam masala, chilli powder and mustard powder
250 g tin of chopped tomatoes
225 g (8 oz) broccoli, cut into small florets

Heat oil or ghee in a heavy-based frying pan and fry onion until lightly browned. Add garlic and fry for one more minute. Turn up heat and add steak, stir frying until browned. Lower heat, cover and cook gently for around 10 minutes until meat is tender. Stir in spices and a pinch of salt, cook for a few seconds then add the tin of tomatoes. Cook, uncovered, until most of the liquid has evaporated then add broccoli and stir fry for a few minutes. Cover partly and cook for a few more minutes until broccoli is tender.
