Barramundi with orange, rosemary 
and coriander

 

Ingredients

4 whole New Forest barramundi, scaled and cleaned
2 spriggs rosemary, chopped
2 tsp coriander seeds, lightly crushed
Juice and zest of 2 oranges
100 ml (4 fl oz) olive oil

Season fish with salt and pepper and drizzle over a little oil. 

Grill or fry for 10-15 minutes, or until cooked through. Meanwhile, mix remaining ingredients in a pan and warm gently to infuse flavours. Pour herb mix over fish just before serving.
