Barbecued asparagus with lemon and mint butter 

Ingredients

2 bundles British asparagus
125 g (4 oz) unsalted butter
Juice of 1 lemon
2 tbsp chopped mint 
50 g (2 oz) shaved parmesan

Trim asparagus, if necessary. Toss in 2 tbsp olive oil and season with salt and pepper. Cook over a medium barbecue for 2 minutes each side, or until lightly charred. Melt butter, add lemon juice and mint and pour over asparagus. Top with parmesan.
