Apple pie

Ingredients

1 x 500 g pack Jus-Rol Frozen Shortcrust Pastry, thawed
1 kilo (2 lb 3 oz) cooking apples, peeled, cored and 
   sliced thickly
Juice and rind of 1 lemon
1 tbsp flour
2 tsp cinnamon
100 g (4 oz) caster or soft light brown sugar
Sugar for dredging

Preheat oven to 200C, 180F or gas mark 6.

Divide pastry into two. Roll one piece until large enough to line a 20 cm (8 in) shallow pie plate. Chill while preparing apples. Toss apples with lemon juice and rind, flour, cinnamon and sugar. Pile into pastry case. Roll out remaining pastry and use to top pie. Decorate with pastry apples, if liked. Brush with water and dredge lightly with a little sugar. Bake for 20 to 25 minutes.
