Anzac sundae

Ingredients

12 Anzac biscuits, 
400 g (14 oz) apricots, halved and stoned
100 ml (4 fl oz) orange juice
2 ½ tbsp clear honey
250 g (9 oz) vanilla ice cream
3 passion fruit, halved

Break biscuits into quarters. Place apricots, orange juice and honey in a pan and simmer on a low heat for 12 minutes, or until fruit has softened. Cool. Place two apricot halves in the bottom of each of 4 serving glasses. Layer in biscuit pieces, ice cream, passion fruit, remaining apricots and juice and finish with a layer of biscuits.
