White chocolate fudge

Ingredients

350 g (12 oz) Billington’s Golden Caster Sugar
30 g (2 oz) unsalted butter
125 ml (4 1 / 2 fl oz) evaporated milk
1 tsp vanilla
200 g (7 oz) white chocolate, chopped

Place sugar, butter and evaporated milk in a pan with a pinch of salt. Heat gently until sugar has dissolved. Increase heat and bring to boil, stirring. Reduce heat and simmer for 5 minutes. Remove from heat and stir in vanilla and chocolate. Stir until chocolate has melted and mix is smooth. 

Butter an 18 cm (7 in) square tin and pour in hot fudge. Allow to cool, then chill until firm. Cut into squares.
