Tomato, chicken and courgette skewers

Ingredients

12 firm vine ripened tomatoes
4 chicken breasts, cut into thin strips
2 large courgettes, sliced
1 bunch basil
75 ml (3 fl oz) olive oil
75 ml (3 fl oz) vegetable oil

Soak 8 wooden skewers in water for 20 minutes and preheat a barbecue or grill. Thread tomatoes, chicken and courgette slices alternately onto skewers and season with black pepper. Blend basil with oils in a liquidiser and drizzle over kebabs. Grill or barbecue for 5 minutes, or until cooked through.
