300 g (11 oz) SR flour
1 tsp baking powder
75 g (3 oz) Country Life block butter
50 g (2 oz) caster sugar
Finely grated zest of 1 orange
75 g (3 oz) strawberries, chopped
50 g (2 oz) sultanas
Approx. 150 ml (5 fl oz) milk
Preheat oven to 200 C, 400 F or gas mark 6.
Sift flour and baking powder into a bowl. Rub in butter until mix resembles fine breadcrumbs. Stir in sugar, zest, strawberries and sultanas. Add milk gradually, stirring with a round bladed knife, until mix forms a soft dough.
Knead gently for a few seconds on a floured surface to remove any cracks. Roll out until 2 cm (3⁄4 in) thick. Cut into 6 cm (2 1 ⁄ 2 in) rounds. Place rounds on a baking tray and brush tops with milk. Bake for 10 to 12 minutes, until risen and golden.
