Steak with goat’s cheese butter

Ingredients

4 lean Scotch Beef sirloin steaks
For the goat’s cheese butter
200 g (8 oz) goat’s cheese, softened
200 g (8 oz) unsalted butter, softened
1 tbsp fresh parsley, finely chopped
1 tbsp fresh basil, roughly torn 

To make the goat’s cheese butter, place all ingredients into a food processor and blend thoroughly for about 2 minutes. (This can be done by hand if you wish — just work the butter in a bowl and then add cheese and herbs.)

Place in cling film and roll into a sausage shape and refrigerate until ready to use.

Grill or fry the steak to your desired preference, and serve with a slice of the goat’s cheese butter on top, and potatoes and vegetables of your choice.
