Herby patties with 
Bramley apple sauce

Ingredients

450 g (1 lb) lean pork or turkey mince
2 tbsp chopped sage
1 tsp each of dried oregano and thyme
Finely grated zest of ½ lemon
1 small egg, beaten
½ tsp allspice or cinnamon
2 Bramley apples, peeled, cored and chopped

Mix meat with herbs and zest and season with salt and pepper. Add enough beaten egg to bind mix together. Mould into 8 patties. Heat a little oil in a frying pan and cook patties for 8 to 10 minutes, turning occasionally, until cooked through.

Heat 2 tbsp olive oil in a pan. Add spice, 100 ml (3 ½ fl oz) water and apples and cook for 15 minutes, or until apple is pulpy. Serve with patties.
