Coconut cake 

Ingredients

175 g (6 oz) SR flour
½ tsp baking powder
175 g (6 oz) butter
115 g (4 oz) Fruisana Fruit Sugar
3 medium eggs
75 g (3 oz) desiccated coconut

Preheat oven to 180C, 350F or gas mark 4. Grease and line an 18 cm (7 in) round cake tin with baking paper.

Sieve flour and baking powder together into a bowl. Add remaining ingredients and beat with a wooden spoon for a few minutes until well mixed. Spoon mix into tin and bake for 1 to 1 ¼ hours, until well risen and golden. Leave in tin for 5 minutes before turning out onto a cooling rack.
