Beef and basil pizza

Ingredients

1 part-baked ciabatta loaf, cut in half lengthways
25 g (1 oz) prepared garlic butter
225 g (8 oz) sirloin or rump steak
4 tbsp basil oil
1 bag rocket leaves
50 g (2 oz) each of Parmesan shavings and pitted black olives, chopped

Place ciabatta on a baking tray, lightly prick with a fork and spread with garlic butter and bake in a hot oven for 10 minutes, or until crisp. Meanwhile, place beef in a bowl and coat with 3 tbsp basil oil. Season with salt and pepper. Cook in a hot griddle pan for 2 (rare) to 6 (well done) minutes each side. Rest for 2 minutes then slice thinly. Top bread with rocket, beef, cheese, olives and drizzle over remaining basil oil.
